Sol Y Sombra
Glass: Old-fashioned
Garnish: none
Method: muddle grapefruit, orange and sugar in base of glass. Add rum and fill with crushed ice. Stir well and float Creme de Mure.
Ingredients:
¼ pink grapefruit, cut into wedges
¼ orange, cut into wedges
2 barspoons demerara sugar
50ml Mount Gay Eclipse rum
12.5ml Creme de Mure
Garnish: none

Glass: martini
Garnish: single coriander leaf
Method: shake all ingredients with ice and fine-strain into chilled martini glass.
Ingredients:
50ml Plymouth Gin
12.5ml Limoncello liqueur
1 dash Martini Extra Dry Vermouth
1 dash Angostura Bitters
3 leaves fresh coriander
Garnish: single coriander leaf
Method: shake all ingredients with ice and fine-strain into chilled martini glass.

Watermelon Man
Glass: highball
Garnish: physalis
Method: muddle watermelon and grapefruit in base of shaker. Add liquids and shake with ice; strain into ice-filled glass.

1 thick slice of watermelon
¼ pink grapefruit
50ml Sagatiba cachaca
25ml Gomme syrup
25ml pineapple juice
Garnish: physalis
Method: muddle watermelon and grapefruit in base of shaker. Add liquids and shake with ice; strain into ice-filled glass.

Garnish: Lemon wedge
Method: Shake all ingredients except the soda with ice and strain into an ice-filled glass. Top with soda.

37.5ml Bombay Sapphire
12.5ml Lychee Liqueur
2 barspoons Elderflower Cordial
1 barspoon Blue Curacao
1 dash lemon juice
Top with soda water
Notes: Named for the Lily Allen song. Careful with the elderflower - it can overpower the drink.
Garnish: Lemon wedge

Garnish: Orange zest twist
Method: Shake all ingredients with ice and strain into an ice-filled glass.

50ml Lychee liqueur
25ml lemon juice
2 dashes Angostura Orange Bitters
½ Egg white
Notes: Add sugar syrup to taste, if required. If you don't have any egg white, a small splash of soda will serve a similar purpose, but not as effectively.
Garnish: Orange zest twist
